Whenever I go to squat, I can't help but stumble backwards, whilst using a barbell on my shoulders... I can squat fine whilst using plates underneath my heels but other than that, I barely break even, how do I overcome this???

Your calves lack the flexibility to perform the squat. That's why putting the plates underneath your ankles helps.
