So what would a routine be like if i just did the big five everyday? Literally just 3x5 of bench, squats, deadlifts, barbell rows and OHP everyday? Iunderatand recovery would be an issue, but if it was at the right volume and intensity would it be a good routine?

I've been doing a routine like that (except with pull ups instead of rows) in an effort to maintain muscle while I cut and for my purposes it's been working; my lifts have more or less stayed consistent with minor improvements over a few months, I've lost about 40lbs, and my form has been developing nicely. Idk if I'm going to keep the routine when I'm back to bulking though, I have no idea what kind of results it'll provide with a surplus
Also the recovery might seem like it'll be a bitch but after a while your body adapts; what you really want to watch out for is the time required to move through a routine like that. Cardio + 5 compound lifts + accessories will end up taking 2-3hrs easily

I tried something similar, just replaced rows with pull ups.
Did 3 times a week, monday 3x5, wednesday 3x3, friday 5-3-1. Increase weights by set (ohp 5kg, bench 7.5kg, squat 10kg, dl 15kg), increase weights by day in a week by 5kg,
increase weights every week by 2.5kg.
Did it for 2 months - got really good results, but there was no way I could continue past those 2 months - literally burned myself out.

It is very good for maintenance. It also works as strictly exercise as how you were doing it. You won't see a whole lot of games, but you will lose weight and greatly increase your caloric deficit through exercise.
