Femanon here, recently started this routine but there is no equipment in my gym for me to do back extensions. What would be the best substitute exercise?

Do them hanging your torso off a regular bench with your feet anchored.
You can anchor them on another bench, a rack, have a partner hold your feet or whatever.

No, that's plenty. Keep it at a linear progression and stick to that program for at least 3 - 4 months before you change anything.
If you want to work on your abs for aesthetic reasons, do exercise ball crunches and stomach vacuums.
