I'm 1.96 m tall and 100 kg and I eat as much as my sis who is 52 kg and 1.62 and I actually GAIN weight with how much she eats, while she remains thin / even loses weight, went from 57 to 52 in like a few weeks.

But are talking about gaining/losing weight or general health? For the first one, I can absolutely say that 1500 Calories of anything will change your weight about the same.

Of course, 1500 Calories of fucking sugar is not much at all and you'll have a lot of trouble maintaining such a "low calorie" diet for long. Additionally, it does not include too many nutrients, we need variety, so that's not really good for your health either.

However, if one stuck to the diet, the expected weight changes would happen all the same. So while being healthy takes more work, controlling your weight is all about Calories In and Calories Out.

Most people here are calorie in- calorie out proponents. While the body can be more or less modeled as a simple machine like this, there's various things that can occur to modify burn rates.
Thyroid hormone is largely responsible for your metabolic rate (more TH = higher rate). In excess it can lead to muscle wasting, if scarce it can lead to human ambulocetus syndrome.

That terrible joke aside, other things that can directly lower metabolic rate (and the converse increases it) are: low cortisol, low HGH/ insulin like growth factor
Indirectly: vasopressin, dopamine, aldosterone, renin, angiotensin II, and other such things modify vasodilation and water filtration rates among other things which can reduce metabolism and or pack on water weight.
The insulin-glucagon interplay for sugar regulation also has a pretty big weight in the matter.

All that being said, basically everything that would decrease metabolism is encouraged by a sedentary lifestyle that is high in fat and sugar consumption. Placing increased metabolic demands on your body increase the basal rate, and also make the body significantly more efficient at processing sugar. I recall reading about how marathon runners have something 10x the energy from the same amount of sugar as a sedentary individual, but I can't find the source on that right now.

Basically, our bodies do obey the laws of thermodynamics and, in general, calorie in- calorie out does a decent approximation of weight gain/loss. But, metabolic demands are extremely different based upon activity levels, mostly because physical activity boosts the hormones that stimulate muscle production (and fat is difficult to lose without aerobic exercise).

Very easy example : protein bioavailability. It's the amount of protein your body will metabolise out of the protein contained in a given food. For instance, soy has a very bad protein bioavailability, like 50-60%, and so does raw egg whites.
