Is cheese really that bad for you when cutting? Sometimes to spice up my grilled chicken, I'll melt a slice of pepperjack on and it is fucking awesome. Am I holding myself back?

It's relatively high calories for how dense it is desu.
Nothing wrong with it but if you don't properly account for it you might be eating more calories than you anticipated and ruining your cut!

You can eat whatever your little heart desires when cutting. As long as you're below your calorie count and get protein in.
I make chocolate cake with whey protein and I'll have some every now and then even during a cut.
Learn to read nutrition labels and decide for yourself if cheese is worth ~80 calories, mostly from fat.
Imo just get used to eating chicken plain.
If you want some more flavor, eat it with some peppers.

parmesan has the highest protein to fat ratio Ive found, but its not that hard to accomodate the amount of fat in other cheese on a cut

Fats are as important for gains as carbs or protein.
Just follow your macros, get as much fiber as possible, supplement micros (including electrolytes/minerals) and it is basically impossible to go wrong.
You can eat it, just fit it in with your calories. I have 75g of cheese every night before bed - 303 calories, muh last meal of the day (most days anyway)
