So I work out 3 days a week, but today is my work out day and I'm feeling sick. Would it be better to do 4 days this coming week or 3 still?

If you're sick, it's better to just skip a workout. Your body is busy fighting off the illness, you don't need to stress it further with a workout, not to mention your lifts will be shit anyways. Start back up on your normal routine once you're feeling better.

lol. only two or three times since i started lifting. i usually get back on track pretty fast.

i've actually noticed that it tends to happen when i'm on a cut.

I meant something productive. The issue with taking a day off is that it's easy to keep taking days off. So when I take a day off, I make sure to read a book or something when I'm supposed to be out.
