I always made sure that I walked enough that I burned the excess kilojoules I consumed that day. Does that not work?
daily fluctuations, inaccuracy in counting, inaccurate calculation of calories burned during exercise etc.
lots of things can affect your result. the important thing is what happens over longer periods, like weeks/months

Don't eat above what they tell you honestly, even if you're burning calories playing Pokemon.
At 120 kg you shouldn't need to worry about eating too little, assuming your goal with this is to attain a healthy bodyweight.

You kinda have to work backwards. Track the calories you eat, and track your weight. Given those two variables, you can solve for TDEE.

Burning off the excess doesn't work. Diet first fitness second.
Also weight loss happens in cycles for a lot of people. You'll lose a ton one week then lose a it the next one then lose a ton again. You want to look at the greater curve of weight loss.
