So droopy or straight pecs. What is the deciding factor? Training style or genetics?

A little of both.

Pectoral origins play a big part in chest shape. Insertions not so much..

An underdeveloped clavicular pec can have a rounder softer look, whereas a properly developed one gives a nice angular, cut look to the chest.

Overdeveloped sternal heads can result in droopy man chest (see: scooby)

Its genetics. All I do for chest is flat bench 3x week. No chest flys, no decline/incline. My chest remains full/wide/thick without any drooping.

Although I do push-press I think that might hit upper chest a little.

How do you determine whether the insertion is being pulled towards the origin or the origin pulled towards the insertion? Oh, right, it's arbitrary. The muscle contracts with two (or more) anchor points. How the body moves in response to that is based on external factors which change.

For example, your quads attach across your knees. If you do a leg extension machine your lower leg moves while thigh remains stationary. Ergo insertion is moving towards a stationary origin. Now what happens if you are standing up from a squat? Your lower leg is stationary and your thigh moves. Origin is moving towards a stationary insertion. It's REVERSED. It's arbitrary.
