Ok guys I'm confused.
How do I keep track of everything I eat ? If I want to eat at a surplus then I need to eat more than my total calorie intake. It's so hard to track though, would I have to track only a few foods and just eat the same things ? How is it possible to keep track of everything you eat?
Such as a meat sandwich, like how do you find the exact calories and protein in that? Would this be something I'd just need a scale for?
How did you deal with this? What am I doing wrong?

learn how many calories are in things then eyeball it.
don't both calorie counting, just monitor your bodyfat. if you're bulking, eat til you're stuffed everyday, and if you start gaining too much fat scale it back. you'll eventually become comfortable estimating how much you're eating

You cook 1 cup of rice, 1/4 cup has 32g of carbs and 125 calories, so theres 32g*4= 128g carbs and 125cal*4= 500cal
You cook one chicken breast the fucking bag it comes in says 1/2 chicken breast has 30g protein and 200 calories
Now youve got a 900 calorie meal with 60g of protein and 128g of carbs.
Do the same for any sauces or veggies you add. Any retard can do this.
