If your goal is efficiency just blend the chicken and maybe throw in some raw eggs as well.
It won't taste good but I guarantee it will taste better than putting the banana in.

Bullshit - I made a roasted plantain, caramelized red onion, and grilled chicken breast pizza and it was fucking fantastic.

Schnitzel is just chicken pounded to an 1/8th-1/16th of an inch.

Take a half pound of chicken breast and a half pound of chicken thigh, cube it into 1-2" pieces. Toss it in a food processor (in batches if you don't have access to a commercial processor) and run it until that stuff is a sticky pink paste.

Remove chicken goo. Dice half a white onion, add it to the food processor along with a couple cloves of garlic, a fistful of parsley, salt, pepper, and a little red pepper. Pulse it into a slurry.

Add slurry to chicken, add a half a cup of bread-crumbs (or almond meal if you're going low-carb), mix, form into patties, grill, enjoy. Shit is fucking delicious.
