the biggest differences have to do with type of milk, diet of animal, and raw or pasteurized. Levels of protein for type of milk rank from high to low: Sheep, Goat, Cow. A cheese made from grassfed animals carries significantly higher levels of micronutes like omega 3 fatty acids which are derived from higher concentrations of grass and lower concentrations of corn in the diet. Raw milk cheese is cheese that has not been pasteurized and it will carry higher portions of pro-biotics that will help fine tune ones digestive engine.
