Is it a good idea to make 5x5 and 3x8-12 for the same muscles? In the same workout?
Example: benchpress 5x5 then incline 3x12

Lower it to 3x5 for the main lift. 3x8-12 for assistance lift. That's essentially the thinking behind wendler's 5/3/1

Yes it's perfectly fine. I would alternate between 5x5 and 3x5. So keep going 5x5 until you fail then do 3x5 with the same weight then keep going up till you fail again. Do a 10% deload then go back to 5x5. I broke a plateau with this and am currently benching 225 for 5x5 at 170.

Not that anon, but basically with 5/3/1 you'll do 3x5 with varying weight> pic related
for three weeks then a deload week. You pick an assistance exercise which you do for 3-5x8-12. You can repeat the same exercise but I prefer doing a different exercise. Ex. Bench as main lift dips, incline, or dumbbell for assistance. I recommend getting 5/3/1 just Google the pdf.

I'm doing hepburn routine for two months nowm which is pretty much exactly that.
8x2, then 3x6. You do one more rep every workout at the end, until you reach 8x3 and 3x8. This is when you add weight and start over at 8x2 and 3x6.
