I'm just posting what I've saved from /fit/ months and months back. I've honestly only ever made the tuna patties (which is the GOATest). Never tried most of them.

Yeah, the measurement doesn't seem right. I used two cans of light tuna, and that's 44g of protein. I got about 3 patties out of it, though this last one was pretty big.
Had it on some seedy toast with some chopped spinach added in. It's better than choking down chunk light straight out of the can.

Keto / LCHF fish sticks
1 cup almond flour
2 tbsp coconut flour
4 tbsp grated parm
Optional: chopped herbs dried or fresh such as dill or parsley, onion powder, pepper,
1 egg beaten with 1 tbsp water
Cut white fish (tilapia or cod) into sticks . dip in egg wash then flour mixture
Fry on medium-low heat in coconut oil til both sides are even
Or spray pan and sticks with coconut oil and bake at 375 for 25 mins turning once til golden brown

Are there any actual books aimed at cooking simple healthy recipes that's not pretentious shit and ideally for one person so you don't have to fanny around with dividing measurements by 8 and super ideally with some kind of shopping list type thing where it says "buy this and this makes these meals for this many days"?
I check out BBC's Good Food site which seems pretty good but I'm always buying shit and then letting it go to waste when other recipes don't call for it.

Why would you do that? The easy thing with the supermarket bread is that the calories are listed on the label, per weight and per toast.

It is legit. Took me about 10 runs to get the recipe right. I use vanilla myprotein impact. If you are using a different flavor alter the vanilla/cinnamon to personal taste.
Currently working on a version using bran to make a protein/fiber cake. (get constipated when I am cutting). it is turning out okay, but just a little dense. Need to work on the ratios a bit more.

The reason it is solid at room temp is because sat. fat has a higher melting point than unsaturated. I tend to use lean beef or turkey mince for the bolognese.
For the sauce, try and make your own tomato sauce otherwise just buy chopped tomatoes and look for tins with lower amounts of added sugar
