Fruit and veg that aren't pickled are also extremely rare and ridiculously expensive in Japan. Jap food being healthy is a myth exacerbated by people who haven't spent much time in Nippon.

300g carbs isn't high at all. It's not uncommon for asians to eat 500g+ carbs a day. That's how most of the eastern and developing world eat.

Carbs aren't what is peculiar about the American diet. It's the huge amounts of fat that Americans eat that sticks out.

Japanese might eat a bowl of steamed rice with some vegetables, natto, soy sauce, and a bit of fish. Americans would eat a bowl of rice that's been fried in oil or butter, with pork and eggs mixed into it.

asian food is very healthy, but not a very "fit" food. they utilize plenty of healthy ingredients, but are heavily lacking in protein. i grew up on a mixture of my parents' cooking and fast food, and ended up being very skinny-fat. maybe it was just my family, but i think most asian cuisine consists of too many carbs. the soy is okay, i'm not sure how much that affects your body chemistry, but i know endless carbs can't be good for you.

Mid year nutrition student, overall consensus is anything Mediterranean. Plenty of real cheeses, oils, lean meats, vegetables, nuts and seeds, wine, whole grains. The whole "excess fat is bad" is a myth IF you're I take is mostly mono-polyunsaturated fats.
