Hi, /fit/. I've been a picky eater my whole life, but recent health problems have encouraged me to do otherwise. Since then, I've been able to eat:

-celery
-green onions
-carrots
-peas
-corn
-cauliflower

What other vegetables should I start eating that contain nutritional value that my list might be lacking? Any advice greatly appreciated.

Leafy greens like spinach and kale. Red cabbage is fantastic, too. Beets are supposed to be good for you.

Protip: make smoothies. Blend the shit out of your vegentables and drink em, add in some frozen berries to make it taste good (don't use juice or anything).

What's a tasty way to prepare spinach? I've only ever eaten it with lots of cheese, which is counterproductive to my current fitness goals.

Learn how to make really good salads and really good salad dressings. Also learn how to cook veggies better. Experiment with different ways to sautee them in different fats, use different spices, see how some always taste great together (for example, making a mirepoix for a dish)

Eating healthy can be a lot more enjoyable if you look into better cooking and food prep.

Is really all you need. Seriously. Most fruit and vegs are shit tier when it comes to micros, I'm not kidding. Those three (and a few others I probably missed) are pretty damn good, though.

Micros aren't all that matter. Most of the benefits of fruit and veg don't come from their vitamin/mineral content.
