This. The classic #8 carbon steel with the standard beechwood is glorious. They develop marvelous patina (just don't be a fag and do they 'stick them in a potato' thing). And its like $12.

Basically you stick the knife in a potato and leave it overnight. The acids in the tater greatly accelerate the formation of patina. Mustard or straight vinegar also work, in just a few minutes even. I prefer the look and wear of natural patina, but whatever floats your boat I guess.
