Saint Laurent did some really nice western-inspired boots that are more wearable and versatile than full on cowboy boots. You can wear them instead of looking like a donkey.

I think they look good with slim cut jeans. Some older guys I work with wear them with slacks, that looks stupid imo.

is it a good idea to remove some of the leather above the ankle? i like cowboy boots a lot but they look weird if worn underneath slim-fitting jeans and not very comfortable.

In Texas, it's very common. People wear them with suits, job interviews.
