Yes, I've done it more than once. You'll be able to see where the stiching was for a week or two afterwards, but eventually it becomes almost indiscernible. You can also zip it up and throw it in washing machine after you've carefully removed the tag, and then just let it air dry. That almost entirely erases the stitching marks. The waterproof treatment is on the inside of the fabric, and that's what you're trying to protect by zipping it closed before putting it in the washer. That's how I've done it, at least, and it's worked well for me.
