What's the rule with these things? Is it the shoe that dictates which sock you wear, or the trouser? When should I pull them up, and when are colours acceptable?

With colours, try to match your trouser or shoe. You could maybe experiment with the sock colour if that's where you want attention. The only colour to really avoid is white (especially with formalware) but even then some subcultures tend prefer only white socks.

This is basically the only real answer. Wool is by far the best, and unless you want some autistic color for your /mfa/ fit, Darn Tough is probably the best.

You could also get a women's model from DT if you want something colorful. Just size up from your men's size.

wool is a breathable insulator so it maintains your body temperature
it's water resistant
it doesn't trap odors
basically wool and linen are the best fabrics ever
