Which embedded computer to use?

I've got a project in search of a computer, unsure what would be the most suitable.

I want to be able to have my voice recognized, manipulate some digital or analog i/o pins and have a speech synth reply.

Not sure where to start. Could somebody point me in the right direction?

I guess I should explain a bit more.

I've got an older, stripped down 80s tarbo shitbox I'm fixing up that has also become a rolling testbed for electronics projects.

I'm thinking that if I can get speech recognition and synthesis working it would be a fun gimmick and diagnostics tool.

Adding in some shunt resistors or hall effect current sensors could be useful, along with it telling me about overcurrent conditions and blown fuses. Gimmicky, but this is a zero fucks given project car.

A canbus controller and transceiver and I could interface it with the ECU and get pretty detailed data logging.

I know I could probably get this done with an raspberry pi and python, but I figure there's probably better hardware I could use, if not a program already made I could use to do this.

my vision is to cut a couple of the traces for the ethernet port (assuming gigabit), bridge them over to the 3/5v rail, do the power over ethernet method, and have a little computer at the end of an ethernet cable.

The main idea I could see this for would be for network cameras, shitty servos providing pan and tilt. then put it in some nigger rigged housing for weatherproofing.
