My guess would be the femur of something large, cattle or maybe moose... So you can get a large enough flat piece. Working bone does smell like ass though, like the other anon said.

You could also consider other stuff made from bone and/or horn. Buttons for example or jewellery. Early dice were made from bone I seem to recall. Or if you're looking for a challenge a chess set.

I would try deer antler.
Looks like you can get them for under 20$ and they're softer than bone, and solid all the way through.
