I often have situations that rely too much on dexterity like this: a bolt needs to be taken out, but i need to hold the machine in place or it will turn with the bolt, AND the nut needs to be held fixed separately so it comes off the bolt.
Circuit boards have "helping hands" which helps a lot with soldering. Is there an equivalent tool for machining?

vice/vise
in reality a set of helping hands is as much use in machining as in soldering.
i.e. none.

Have you never soldered before or are you just a moron? You can't hold multiple objects at different angles in a single vice, and you can't use multiple vices easily

i have never successfully used a set of helping hands. i find proper pcb holder can be useful but with a little dexterity practice you can hold a board and component while feeding solder with one hand and iron in the other, certainly don't need mr wobbly shite over there.
mechanical is much easier, you clamp whatever you are working on, bolt in one hand nut in the other. couldn't be any simpler?

vise grips
Acquire friends you degenerate or learn to be dexterious as fuck.

for electronics work, panavise does what nintendon't
soft jaws vise is good for when you've got precision machined surfaces you shouldn't clamp, but fuck it you're gonna clamp it anyway
bench vise is the normal choice for fitters
leg vise is more durable than a bench vise if you're regularly sledgehammering on parts
or get a fixturing table if you've got unlimited money
