I live on a busy road and I've got these wide fucking windows that let all the outside sound into my study.
I want to board them up, not sure what material to use though.

You can get glass panes designed to block specific frequency bands. You will be amazed how well these work while maintaining a glass clear view. Essentially these are two layers of glass having different thicknesses sandwiching a thin plastic layer. You might reuse your existing glass panes.
Boarding them up is to hasty yet.
Plain 3 layer glazing is also very efficient for noise damping but also heavier and thicker.
