I make my own bacon at $2.99/lb for the whole pork belly, some salt, brown sugar and a tiny amount of sodium nitrite. Cold smoke for 8 hours. Compare that to good quality store bacon.

It protects against the development of botulism toxin. You use a very small amount, 3g of a 6.25% sodium nitrite mixture called Prague Powder #1, per kg of belly. It's my understanding that celery seed contains enough sodium nitrite that it could be used instead, although I haven't tried it.

I stand corrected. However, you'll still have to be careful to use the correct amount since the percentages of Prague Powder #1 will not be the same as celery powder. And I'd bet that the celery powder will vary in nitrite concentrations depending on age of celery at harvest and conditions the celery were grown under.
I find it much safer and simpler, since it's the exact same compound, to use Prague Powder #1.

Just buy things that are listed as natural without any of the vegetable based oils except Palm oil or coconut oil, which is ok to eat.
Also don't eat HFCS or any of the preservatives. That should keep you alive while eating normal food.
