I want to turn this into a board for our pen&paper group.
It should be portable and cheap.
I have no knowledge of craftsmanship whatsoever and only basic tools such as a hammer and a few saws.
My idea was to laminate the paper, cut it in half, glue it on 2 pieces of thin wood and add hinges.
Any piece of advice?

Are the hinges really that important? Just laminate 2 halves separately and lay them next to each other.
You could turn it into three parts so you don't have a seam along the main grid thing. One for the grid, one for the info boxes, and one for the number tracker.

Dunno if you want this type of solution. But my friends and I have made numerous board games, and we have used this company exclusively. they do a damn fine job.
