Shitty builders left me with leaky pipes! I've been trying to get to them to fix it but I can't reach them and hiring someone else is going to cost a fortune.
How wise would it be if I tried ripping all this shit off and fixing it myself?

I've done it. But it requires some skill, particularly to re-tile.
What's behind that wall? Sometimes its easier to go in through the back to fix a leaky pipe if its only sheetrock.

from the looks of this picture, it's not the pipes leaking but a shitty mortaring from the tile work. Are you positive that it's the pipes that are leaking? You should be able to access the pipes from the other side. It might be that the gout is shitty and causing the water to wick up the wall.

Not at all. Pretty sure is a 1 year fixit law by any contractors. Send them a certified letter then sue for damages.
