I'm building a refrigeration cabinet. I've got a drain pan with a small heater. Is two float level switching enough safety for the prevention of the heater burning out or should I wire a over heat Sat in the drain pan?

float switches seem like an odd choice for something that's gonna produce an ounce of water a day. using a defrost-type water-proof thermostat seems more reasonable.

Not OP, but for condensation removal?
Why not just drain or do what modern refrigerators do and use hot air from across the condenser coil to evaporate the water.
A properly sealed cabinet shouldn't produce that much water.
