Use power tool batterys or a golf cart battery.
You can't just put lots of hobby batteries in a motorbike. With the amount you will need complex battery management and cooling will be needed.

Just make sure the batteries have good BMSs. Obviously for safety, but also to make charging easier the system more reliable. I like LiFePO4 batteries, they're slightly more expensive and slightly bulkier but won't violently explode if you sneeze on them. Dakota Lithium aka Clean Republic make nice ones for ebikes.

Aliexpress is where I've got my last three 20ah 48v batteries. There's some reliable dealers on there.
Delivery is usually 3-4 weeks, but half the price of a UK supplier.
I discovered someone using these for motorbikes recently. Energy density is lower than the best 18650 cells but rated for 40A charge 100A continuous discharge. They are basically normal NMC li-ions but doped with graphene oxide flakes to reduce resistance allowing for large currents. The guy who bought some said they sell them for around $20 per 10ah cell or $29 for the 20ah.
For DIY the energy trade off is probably worth avoiding complex cooling systems needed for 18650 cells.
