I'm fairly new to woodworking, and want to make some wooden swords for my nephews for Christmas.

I have an orbital sander, will that be okay to round edges and create the angles on the 'blade' of the sword?

From what I've seen, belt sanders are better suited to this, but I'd like to know if my orbital sander will manage the job.

This is the case. A decent belt sander removes material much faster than an orbital sander, so it would make forming the angles go faster. It's probably too aggressive for blunting the edges unless you switch to a very fine belt. Ideally, belt sander for coarse material removal, orbital sander for finishing. If you do the whole thing with the orbital sander, I'd use the coarsest grit you can find for roughing out the shape, then finish with a finer grade.

It would work fairly well for rounding over edges. However, while it would technically work for tge blade bevels, it would take a dozen discs and a few hours. Even a belt sander is not a great choice, but would work ok at hogging out that material.
What i would reach for first would be a hand plane, a rasp, heck a chisel and a steady hand or even a straight edged christmas knife.

Made lots of oak wasters a few years back. I burned through a lot of belts on my sander. After working on other projects, I found an angle grinder with a sanding disk makes the quickest work out of projects like that. Just get some junk wood to practice on before diving into it.

If you know your nephews are going to be swinging them around at everything. Add one layer of filament tape and one later of aluminum tape (makes it look good for pretending). This keeps the blade from splintering or breaking easily.
