repurposing an old ('78) space invaders can into a raspberry pi multimedia arcade machine monster... should i tear up the cab in order to fit 2 players?

Are you serious? Fuck no. Old arcade machines in good condition are becoming rarer and rarer treasures. What you should do is use it as a template and build another cab to do whatever with.

it's already gutted. it was only a shell when I got it. I put an LCD monitor in it, and a couple of 4" JBL speakers on top. I donated the control panel to "the Galloping ghost" in Brookfield, IL. (great place, bro... check it out if you have the chance) It's just that the cabinet is not wide enough for two players. so.... make it a one player arcade?

I've got a line on some old, gutted, cabs or by me. Been thinking of doing a project. Just can't decide if it will be a mame cabinet or a an MVS.

If that's the cabinet I am thinking of (Space Invaders/Qix cabinet) then it is wide enough for two players. Back in the day people just crammed in there. It's not any narrower than a standard cabinet of the era. Only the 3 and 4 player cabinets had extra wide control panels.
