Is there any way I can exploit or utilise the componentry in one of these for parts or to use it for something else? I can tear it apart if possible but I'm not sure what if any value of the componentry it contains

Yea, mostly.
The main problem OP would have is that everything in there is going to be SMD parts, and a lot of it will probably be unmarked.
Trying to salvage common components from modern electronics really isn't worth it.
You will spend a lot of time and effort and end up with a small assortment of random-value parts, that would cost very little to just buy new.

De-solder the rangefinding LED
Replace with IR LED
Remove the IR-Blocking layer of the CCD
Enjoy your night-vision camera
