Okay okay. It's less than you're probably making it out to be. I got an umbreon catsuit with inflatable tail and ears from latexcatfish earlier this year. Link is a pic of the suit.

It's not as shiny as you might expect because I had it chlorinated (a demand from my SO, who despises the lubricant necessary with non-chlorinated latex). I couldn't be happier with how it fits and feels except for the eyes, which to the maker's credit are not standard. I specifically asked for red plastic eye covers and while the effect is visually nice the way the hood makes them sit on your face can get really irritating after 2-3 hours. Not so irritating that you can't have fun, but you definitely can't relax and go to sleep or anything.

Does anyone else have any experience with inflatable latex? What's the best experience you've had?

It's not a matter of if it can be polished, it's chlorinated specifically so it -doesn't- have to be polished. Silicone lubricant and latex polishes both have some incredibly slippery additive to them which feels great on rubber, but not so great on your floor. It's a bitch to clean up to boot. This is the compromise. Thankfully, you can get into and out of chlorinated suits without lube and the polish is less important to me than the feel. It'd be nice to be all shiny but life doesn't always work out that way.

It's just you. Wetsuits and Scuba gear are primarily about keeping the wearer warm. They're form fitting because air pockets in your clothes would make you float. Altitude suits are also generally not very form fitting. If you want to fetishize them just add some contrived reason that your space suits have to be made of latex. Maybe they have to constantly be in contact with the skin to apply some chemical they need to survive or something. Maybe it's just in fashion in the 29th century. Who knows.

Skinsuits of different types aren't uncommon. Could be an inner layer for armor, a stand alone simple space suit, a more advanced stand alone suit that could be lightly powered.

I'm pretty sure Star Wars stormtroopers use something like this. You can get as fetishy as you like, then more practical when you head out.

If you go somewhat less hard SF, Varley's Eight Worlds stories have fancy force field suits projected from a widget that replaces one lung. (It also oxygenates blood) They have really good surgery so it's no big deal.
