You also need to simulate what it feels like to try to move a limb that doesn't exist. I don't think current VR tech can do that. You'd still be able to move around with your real limbs and that would really screw with the immersion. You'd have to rig up some sort of special setup if you don't want limbs interfering with the simulation.

Not really, freely waving your limbs around and not have them touching anything including your torso is what's going to create, not break the immersion. Phantom sensations occur when you perform an action and don't see the result, not when you can't perform an action in the first place. The only problem will be when arms are going to hit things, but you can prevent that if you make a collision detection system with oversized hitboxes for them and, say, vibrate when they're too close so you know to move them out of each other's way.
It should also exaggerate the motions with the last part you have, so you can, say, touch above elbow stumps together in-game while IRL your elbows touch instead. Also simulates lighter weight of the residual limb.
The controllers will be put on your forearms- that way the controller has two points of articulation (one of which is single-plane) to care about and thus can accurately calculate the positions of any part of the system, both to simulate the stumps and to prevent collisions.
I think wheelchair with in-game joystick or voice control (a la "wheel me there, maid", and she drives you where you are looking) will be the best and only solution for legs. Arms should have different lengths and prosthetics, but unless you chose to have a complete arm availible, the controllers stay taped to forearms.
Overall, other anons' ideas are more like "pretty pictures for your bondage". My is more like an actual amputee simulator.

Half of the appeal is the convenience of having a helpless sex toy to use whenever I want that I can tease and abuse all I want. This anon has a good idea for the controllers except I'd strap them to the upper arms so it only has the same sort of motion as somebody with no forearms. It's still give the user some control so they could actually play the game/sim but not enough to break immersion.
I'm not sure how well voice controls would work, especially considering I'm not a programmer. If you didn't have legs and still had at least one hand you could just use that to control a wheelchair.

If you strap them to upper arms, you'll have unchecked forearms that can bump into each other and into things and break immersion. When they're on forearms, they only don't know where your hands are, they are small enough to not matter, just end the collision prevention hitbox in slightly larger spheres. Plus you get to use below elbow stumps.
The main idea I had in mind was not doing sexy things, more of doing mundane things.
You have a choice of limb lengths for each arm (AE or BE- no amputation with normal grip on the controller won't work because then you'll have uncompatability with split hooks that need precise shoulder position and generally more programning) and a choice of prosthetics:
None- self explainatory, not very useful especially above elbow, but you get to get accustomed to stumpy life
Split hook- controlled by shoulder motions like they should be
Myoelectric- dunno how to make them without breaking immersion, but you can control them with IRL limbs
Realistic dummy- just a solid lump of plastic in shape of a hand
Pirate hook- yarr. But seriously, at least it's more useful than the one above
And with all of that, you just do normal everyday things you don't even think about normally. Pick up stuff without breaking, open cupboards and doors, write, try using a TV remote and keyboard, feel miserable, et cetra. A normal studio apartament as an enviroment would work.

I guess it's because the model's "center of mass" is still between the hips so it pivots around them, this can possibly be fixed with a simple mod that moves it up into the stomach (or makes it movable in general, moving it down in a normal non-amputee model will give animations a drunk look, and up- airy and graceful one).

Not all amputees by accident/birth become 'burdens' for someone else or society. Many if not all of them aim for the most amount of independence they can achieve given their limitations. Plus, not all of them can afford the same prosthetics, or even prosthetics in general, than others can, which disproportionately affects the amount of concessions they need. And even in the extreme case where the motivations behind an elective amputation are loss of independence, do you really think someone is going to do that without any thought to who would take care of them. I think of "Transgerderism" in a similar light as I think about " the transabled." In brief, I am highly skeptical of current approaches of treating them; enabling/running along with their delusions cannot be healthy in the long run, nor is that usually done-- while being considered ethical--in similar cases. I disagree with your use of the word delusion. I don't think trans people's claims about their gender identity qualifies as delusion. Here's the definition of delusion in the dsm 5:
A false belief based on incorrect inference about external reality that is firmly sustained despite what almost everyone else believes and despite what constitutes incontrovertible and obvious proof or evidence to the contrary. The belief is not one ordinarily accepted by other members of the person's culture or subculture (e.g., it is not an article of religious faith). When a false belief involves a value judgment, it is regarded as a delusion only when the judgment is so extreme as to defy credibility.
Claiming to be of a gender different from your biological sex is only delusional when you believe that gender is the same as biological sex. The reason for the confusion -- why people see trans people as delusional -- is that people are operating under different definitions of what gender is and fail to account for the fact that not everyone shares their definition.
