My unironic vote goes to this. It has this whole crazy, barely coherent mix of in-universe character archetypes, semi-historical accounts, proverbs, symbols and references that all run pretty deep.

But everything else about the show is pretty sub par.

If we're going by original stuff (so no Star Wars, Thundercats, TMNT etc) I'd probably say Adventure Time.
Specifically in the way that it often takes a very small detail of a name mentioned offway to retroactively construct it into a whole thing connected to the general lore -I can never tell how much of it the writers planned and how much they just made up along the way

By proxy anything Marvel and DC animated cause both companies have fictional universes continually going since 1939 with massive amounts of continuity and lore doesn't get any bigger than that. If Tolkien, Herbert and Jordan were still alive making their books cartoons they'd be contenders but no one else even Star Wars doesn't come close to DCU and MU animation.
