Because an audience of thousands is likely to have at least a few people more capable in some aspect than the creators. Also, it's easier to find what's wrong with someone else's work than to create from scratch.

It's not than fans know better, because most don't. It's that there's always at least one person who has insight the creator lacks.

Creating an entire universe out of your ass is pretty hard to do so it's common to have some shit that you didn't think about or just made dislike able in it without noticing.
