Ricks would likely take on the supererogatory duty of improving the multiverse. While he wouldn't be above selfish use of his own technology, he recognizes its capability to do good in a scope others couldn't hope to achieve. Recall the episode where his ship, within two hours of being parked outside a movie theater, negotiated peace between telepathic spiders and human civilians on planet Earth. Imagine that on a much more massive scale. The Council of Ricks would be a massive charity and volunteer conglomerate where the compiled ingenuity of the Ricks would be used to the benefit of people/aliens everywhere.
Rick C-137 would probably be a renegade separate from that group, likely because he's simply smarter and considers the bureaucracy of the organization a hindrance.
Instead of just dragging Morty along for the ride, he would likely be hesitant to actually bring him initially, given the extreme risk of his endeavors. When Rick finally does, he would foster his grandson's emotional and intellectual growth, acting as a mentor who, when Morty is at his most discouraged when understanding how small he is in the grand scheme of the multiverse, preaches that there is still value in our individual pursuits, especially when we serve to improve it in whatever capacity we can. Rather than serving as a wedge to Jerry and Beth's marriage, it can progress relatively normally. Beth no longer has to contradict herself in wanting her father to stay around while his presence endangers her family, and Jerry is no longer being constantly belittled and undermined by his father-in-law. Summer would probably join up sooner in Rick's adventures, as Rick would be less of an asshole about the fact that Summer's female.
Rick's conflicts would mostly arise from selfish, greedy or straight up evil individuals and entities trying to acquire his technology for their own benefit, with season finales Rick (supported by his family) fending off some evil villain or organization.
I thought Rick being an asshole was the problem, but I'm rewatching the earlier seasons and it's not bad. Shit like letting Morty break his legs for no reason at all just seems edgy though. Very much fits the typical R&M/Fedora/nihilistic wicked edgy fan.
