Literally what's wrong with Steven maturing more and realizing that the pacifist route isn't always possible. They did the same thing for ATLA and it benefited from the fact, even showed that Aang can't keep his cool when it comes down to his loved ones being put in harms way. Giving your characters flaws humanizes them more, doesn't put your show at risk of being cancelled.

Just to be clear, it isn't that the character of Peridot is bad. Her arc was entertaining, and she became a fan favorite for a reason. Unfortunately, this was also the point in the show where the story began to lose focus. Instead of every episode being framed by Steven's perspective and relating to him in some way, Steven starts to become less and less relevant to the stories that are happening around him, and his character is simplified and given less agency in order to make room for other characters. This is why in older episodes it didn't matter if we didn't like Lars or Ronaldo, because Steven was still driving the plot and Steven is inherently likable when written well. Now, episodes feel more hit-and-miss because characters other than Steven are the ones controlling the story, and when those characters are shallow or unlikable we can't fall back on Steven to pick up the slack. Peridot took away the spotlight from Steven and he never really got it back.
