Because mermaids are usually designed to be attractive despite their fish parts. Realistic fish humanoids would be more akin to the deep ones from the Ctulhu mythos, and rather terrifying overall.

I dont mind realistic mermaids, especially if they're intended for horror, but I also like pretty unrealistic mermaids, and something in-between.
