Attack on Titan ran out of material to adapt. You know it's based on a comic, yeah? If they pulled a Dragon Ball and kept the show airing non-stop while the original work was still being published the pacing would be unbarable and the show filled to the brim with filler. Just like DBZ, really. Think about how much better Dragon Ball could have been if it was actually a bunch of 26 episode shows. Now think about the enourmous filler filled 'are they still on Namek' clusterfuck that the animated franchise actually is. Surely you wouldn't wish that fate upon another franchise.

Have you actually seen the episodes that they churn out for TV version? It's not exactly Dragon Ball/Dragon Ball Z quality, hell, it's not even Sailor Moon Crystal quality, I imagine they spend as little as possible on each episode, and just have them crank it out as well as they can under a short time limit like a week or so

Well, that one's easy. The episodes were premade to accommodate anticipated hype for a Dragon Ball revival. The eps get pushed and marketed hard come Hell or high water, and audience investment is manufactured through a veneer of supply and the novelty of an anime that updates "quickly". Throw in the promise of merchandise that a classic anime can sell to a kitsch-addicted generation, and you have a series that can sustain itself on fast episode turnover and inflated hype from an obsessive fanbase.
