There's not that many animals running around Manhattan outside of rats, pigeons, sparrows, squirrels, and insects. The most I've ever seen is bodega cats outside of their stores wandering around. Finding a chipmunk, a hummingbird, or even a blue jay is just as rare as finding a unicorn, and often times can only be found in Central Park.
