Is Mary Jane a good character or is she just Peter's rebound

Mary Jane was never a good character. She's a shitty waifu for Parker self-inserts.

A lot of her character comes from how she deals with Peter's bullshit, she starts kind of bland early on, but grows much more later. Once she shows up again in the hobgoblin arc, that's when she starts getting fully fleshed out.

She's a good character who went through a lot of shit that effected her personality. And despite her coming off as out going, she just used that persona as a way to bottle up her fears and insecurities.
