Venture Bros counts as the oldest still airing I think, since it's never been officially cancelled and does eventually get new seasons every few decades. If not the oldest, then definitely one of the last good ones.
I think Rick and Morty is pretty good, maybe not as good as Sealab but decent. Also Venture Bros is still coming

Because animation in general is just a crapshoot in terms of what will land and build an audience, and you're just narrowing its chances of success down when you start specializing in adult-oriented animation. How many adult-oriented cartoons have we seen that only saw a single season, and maybe didn't even have that single season air fully before the network pulled it from the schedule? And the really fucked part of it is that it's not always just the bad or meh shows that tank. There have been plenty of shows with quality writing and gorgeous art that are gimped right out of the gate. I can't blame adult swim or comedy central (or any of the others that try to air this type of stuff) from being a little gun-shy about it since you can sink a lot of money into a project just to have the audience not respond to it.
