Hey, quick question. I've been wanting to read Ewing's stuff in general, but it seems like a lot of his work connects together. Should I read it all in publication order or can I just jump in where ever I want?
I have no problem reading it in order, of course, its just that certain books sound more interesting than others.

I'd recommend going by publication order, although Royals doesn't have much in the way of references to his past works. It's more Mighty Avengers -> Captain America & the Mighty Avengers then characters from those ongoings get split between Ultimates -> Ultimates^2 and New Avengers -> USAvengers. New Avengers/USAvengers also references his Ultron Forever mini and Captain Britain and the Mighty Defenders references his Age of Ultron one-shot tie-in aswell as his Iron Man: Fatal Frontier mini.
So, yeah, generally just stick to publication order if you want to pick up on all of the references to his past works, with Royals being an exception.

Not necessarily. Captain America & the Mighty Avengers is a direct sequel to Mighty Avengers. Ultimates^2 is a direct sequel to Ultimates. USAvengers is a direct sequel to New Avengers. Also, New Avengers continued character arcs for White Tiger and Power Man from Mighty Avengers while Ultimates continued character arcs for Monica and Blue Marvel from Mighty Avengers. Also, Ultimates/Ultimates^2 and New Avengers/USAvengers make the occasional reference to each other.
Royals, Loki: Agent of Asgard, Ultron Forever, Rocket, and Fatal Frontier are all fairly standalone though and you don't need to have read any of his other comics for them.
