It's organic in origin rather than mineral, and undergoes a mineralization process to become a mineraloid. Much like amber, which is also considered a gemstone.

Effectively, a gemstone is any kind of sparkly shiny hard thing. Malachite is volcanic glass. As are agates. Meaning even glass counts in some cases.

Well technically the process by which raw gemstones are formed and the process things like jet, Amber, or pearl are formed are considerably different.

Dino bones are fossilized by an interesting process where the bone rots through and minerals fill the cavity where the bones were. Essentially a dinosaur fossil isn't made of what the dinosaur was born with.

Jet is one of the end products of how fossil fuels are formed. Whereby organic materials like plants, animals and bacteria and what have you get subjected to heat and pressure for several eons.
