That's a rough one.
If you were to shorten your question to "Could Mysterio beat Magneto?" the answer is a resounding "yes". Mysterio is literally a master of the 'set-up', and if he plans and prepares a situation, he could have Mags poisoned, shot (non metallic bullet), exploded, melted, etc... simply with the element of surprise and overwhelming force. Mags is mortal, and while he has a lot going for him, his reaction time is still limited. And the dude still breathes air.

But if you stick to your question of "... in a fight?" - I'm going to go with "possibly". Because again, Mags is mortal, has normal physical senses and reaction time (yes, he has magnetic sense, I know)... ANYTHING is possible.
But it would be really fucking improbable Mysterio would win an actual throw down.
