Maybe a bit off topic, but if we ever get Mysterio in the MCU, I want him to literally just be a guy in a mo-cap suit. Like, that's his official costume. And the whole fishbowl imagery is entirely "movie magic", but in a post-Stark, slightly-upgraded tech universe like the MCU, that means holograms and shaped explosions and things like that.

There really isn't anything after Infinity War that could be anything but a lateral move, in scope and tone.
The entire MCU up to this point has basically just been one big experiment in "What can we get away with in a movie that we've done in comics for years?" and Infinity Wars's giant, universe-spanning, continuity-coagulating super-story is basically the ultimate form of that. Now that RDJ is and has been the face of Tony Stark for a full decade, you can't just cast Army Hammer and expect people to just roll with it. You need entirely new characters to take up the mantle so you can maintain those sweet, sweet merchandising rights and keep the story flowing smoothly.
If/when RDJ officially steps down, you can be sure Riri, or someone very similar, will take the mantle.

Phase 5 - Dark Reign. Enough said. A lot of edge, a lot of hope in the darkness, a lot of House of Cards, leading up to Dark Avengers. Sentry dies here.

Phase 6 - Shit is going off the rails because of Seige, Doom-type is trying to make the Multiverse great again (introduced in Spider-Mem/Spideyverse movie). Ends in Secret Wars where struggle between universes shatters Marvel into a gazillion pieces, forcing total reset of MCU that leaves it dead for several years before starting fresh way later with a new scenario entirely (assuming capeshit films aren't long dead before then).

That...would be interesting. Look at the rivalry between Director Coulson and Mace pre Agents of Hydra. As much as Coulson would prefer to be humble and be a team player, he's become increasingly neurotic about maintaining true control over the affairs of SHIELD. When Mace was introduced he (and Talbot) were the undisputed heads of SHIELD, and by the end his position in the organization was eroded to a PR spokesman and figurehead. Even though Mace (much like Steve) had his heart in the right place he ultimately crippled SHIELD with a series of bad decisions and not consulting his advisors (Coulson and May) but rather his yes men. Compare this to the naive(if suspicious) SHIELD agent he was in S1. WS, S2's "The REAL SHIELD" faction infighting, and Talbot's often antagonistic relationship with SHIELD has severely changed Coulson's stance on leadership.

I don't think Coulson would ever by enemies with Cap, but neither do I think he's qualified to be the next Director of SHIELD (which will likely be Daisy by the series finale)

If you're to the show just skip to episode 12 for the core plot. The first 12 episodes are largely episodic and character building.

S2, S3, and S4 get progressively better. GR is fantastic but so is everything else about the show. It also has one of the best developed MCU villains.

It made sense for him to have so little screen-time in Civil War. He had absolutely no stake in what was happening. He was a child soldier drafted by Tony into his personal pissing match.
The opening of Homecoming really highlights just how much Peter was left in the dark about the fight.
Ant-Man's inclusion was a similar situation, but Cap actually gave him a choice in the matter, properly briefed them, and said they were going to fight super soldier popsicles while Tony would try to interfere with their real goal.
