I've had limited experience of the EU - the Zahn trilogy, The Truce at Bakura, some comics, and a load of the video games.

I'd say Plaguies is a Legends must-read, but it heavily references lots of other stuff. I was reading a translated version (my English wasn't as good back then) where all the referenced works are named in footnotes, but I think it was something the fans added, not sure if the footnotes are in the original novel. But I think the book doesn't rely on other works as much as it simply references their events, so it shouldn't be a problem. Basically Plaguies gives you a quick rundown on all many other works that occur during it.

Shadows doesn't require anything IIRC, and if you've read the Thrawn Trilogy you're good to go into the X-Wing series. The main bulk of it anyway, the last one is set after NJO and was released 20 years later too.
