The thing about Thanos for me is that he's clearly pretty heavily powered, but his motivations are mainly centered around Death, and without the Gauntlet, he's still powerful, but not as capable of taking on various tactics to succeed.

Strip Thanos of his Titan powers, the Gauntlet, or another cube, and he gets wrecked... Doom? Doom has prepared a million different ways to succeed, in both magic, technology, and intelligence.
