For starters, it'd be cool to see the show's take on some of the ones from the movie, like La Llorona or Chupacabra. It's a different continuity, so they could twist them up a bit.

Also, some creatures like Ahuizotls and Chaneques would be neat to have. Since Chupacabras aren't even Mexican creatures originally, maybe mix-up some with some Latin American creatures like Pishtacos or the Ciguapa.
