First I'd have an episode before the true last episode that basically ties together as many of the plot points as possible. Give fans some epic stuff that they've wanted to see, but then the final episode will be intentionally just SOL. Like perhaps an epilogue in the future. Just something comfy that ties the show back to season 1 so that it all comes full circle.

You can watch any of the early episodes with those two(not together, they didn't really have many interactions early) vs Varmints and they would be completely unrecognizable personality wise. Time-Travelling Mad Scientist villain episode, then a two to three parter where The Lich uses his time-machine to go back to the time he came from, pre-Mushroom War Earth. Mad Scientist could maybe be the creator of Princess Bubblegum's ancestor. Bubblegum confronts him for a science fight and we get some answers about her, Ooo and the Mushroom War.

Ooo is an aberrant time-line created by said evil mad scientist as part of a series of temporal experiments. The Lich tries to conduct a massive ritual of doom using the impending loss of life from the Mushroom War to power it. On top of that, he's going to raise everyone who dies and conquer what remains of the Earth, creating a Kingdom of Undeath with which to serve as the centre of a campaign of universal annihilation. This outcome will replace Ooo in the time-line if he succeeds. Maybe show us what Human versions of characters like Bubblegum, Flame Princess, Marceline, Peppermint Butler, etc... look like.

The Heroes must decide if they save Ooo or Pre-Mushroom War Earth, as it's one or the other. It would probably result in a feel-good ending where both time-lines somehow survive.
